Garlic Butter Brazilian Steak
Description
The Garlic Butter Brazilian Steak combines skirt steak with a garlic butter sauce that highlights the meat's natural flavor. The steak is trimmed and cut into manageable pieces, then seasoned generously with salt and freshly ground pepper before searing in a hot skillet with canola oil. Cooking times aim for medium rare, creating a nicely browned exterior with a juicy interior. After resting the steak, butter is melted gently and garlic is cooked in it until golden, releasing its aroma and gently infusing the butter without burning.
Once sliced, the steak is plated and topped with the garlic butter and fresh flat-leaf parsley, adding bright herbal notes and color. The result is a rich dish with distinct garlic undertones that balances the beefy flavor with buttery smoothness. This recipe pairs well with side dishes that complement the garlic butter, such as roasted vegetables or rice.
The garlic is smashed before mincing and sprinkled lightly with salt to mellow its pungency during cooking. Letting the steak rest after searing helps retain juices. Serving the garlic butter immediately, spooned over the warm steak, ensures that the flavors meld but the butter does not separate. Fresh parsley scattered at the end adds a fresh finish. This dish is a focused preparation suitable for an intimate meal highlighting quality ingredients.
Ingredients
- 6 medium cloves garlic
- kosher salt
- 1.5 lb (750g) skirt steak trimmed and cut into 4 pieces
- black pepper freshly ground
- 2 tablespoons canola oil or vegetable oil
- 2 oz (60g) butter unsalted
- 1 tablespoon flat-leaf parsley chopped, fresh
Instructions
- Peel the garlic cloves and smash them with the side of a chef’s knife. Sprinkle the garlic lightly with salt and mince it.
- Pat the steak dry and season generously on both sides with salt and pepper. In a heavy-duty 12-inch (30 cm) skillet, heat the oil over medium-high heat until shimmering hot. Add the steak and brown well on both sides, about 2 to 3 minutes per side for medium rare. Transfer the steak to a plate and let it rest while you prepare the garlic butter.
- In an 8-inch (20 cm) skillet, melt the butter over low heat. Add the garlic and cook, swirling the pan frequently, until lightly golden, about 4 minutes. Lightly salt to taste.
- Slice the steak, if you like, and transfer it to 4 plates. Spoon the garlic butter over the steak, sprinkle with parsley, and serve.
Notes
- Serve with side dishes like Brazilian Cheese Bread, Parmesan Garlic Noodles, Lemon Herb Roasted Potatoes, or Marinated Tomatoes to complete a Brazilian-style meal.
