  • 1 lb lobster meat
  • 1 tsp sea salt Celtic variety
  • 2 tablespoons butter optional, for toasted rolls, melted
  • 6 tablespoons butter divided in half
  • 4 cloves garlic minced
  • 1 shallot minced, large
  • 1 teaspoon lemon zest
  • ¼ cup white wine dry
  • 1 tablespoon tarragon chopped, fresh
  • 4 hoagie rolls large soft or New England style hot dog buns
  • 1 tablespoon butter for spreading on the roll, softened

Instructions

  1. Preheat oven to 350 degrees.
  2. In a small pan, melt 2 tbsp butter.
  3. Brush butter onto rolls and bake 5-8 minutes, until golden brown.
  4. In a large pan, melt 6 tbsp butter on medium heat.
  5. Add in garlic and shallots, stirring occasionally, until fragrant and soft - about 4 minutes. Salt while simmering.
  6. Stir in wine and increase heat to high.
  7. Stir in lobster meat, lemon zest, and tarragon.
  8. Cook to piping hot and sauce is reduced, about 5 minutes.
  9. Slather softened butter on rolls, inside and out.
  10. Add rolls to a hot griddle pan and toast on each side.
  11. Scoop lobster meat and garlic butter sauce into roll that has been toasted.
  12. Serve immediately with drawn butter if desired.
