Garlic Butter Mashed Cauliflower
Description
This recipe calls for a large head of cauliflower broken into florets and cooked gently in a combination of chicken or vegetable broth and water, allowing the flavor to infuse throughout. Half the garlic is added during cooking for mellow baked garlic notes, and the rest is blended in raw with butter creating a rich, creamy mixture. Processing the cooked cauliflower with butter and garlic yields a smooth, mashed texture suitable as a substitute for traditional mashed potatoes.
The mashed cauliflower carries a buttery and garlicky flavor, accented by fresh herbs as a garnish if desired, enhancing both color and brightness. The cooking method ensures the cauliflower is tender without becoming waterlogged, maintaining a pleasant thick texture.
Serving this side dish alongside roasted meats or grilled vegetables can complement the main course. It fits well in meals where a lighter alternative to mashed potatoes is preferred, offering a similar comfort and richness.
For best results, use fresh garlic according to taste, as some may prefer less pungency. Butter can be substituted with olive oil as an alternative. Avoid overcooking the cauliflower to prevent excessive wateriness or blandness. Optionally, boiled potatoes can be added to the mix for a hybrid mash texture.
Ingredients
- 1 Large cauliflower leaves removed and broken into large florets, head
- 4-6 garlic finely chopped and divided, cloves
- 2 Cup chicken broth or vegetable broth
- 4 Cup water or more as needed
- 2 tablespoon butter or olive oil
- salt to taste
- black pepper to taste
- fresh herbs to garnish if desired, chopped
Instructions
- Place the 1 Large Head Cauliflower florets in a large pot and cover with 2 Cup Chicken or vegetable broth and 4 Cup Water.
- Add in half of the garlic ( 4-6 Garlic Cloves) and a good pinch of Salt and pepper, to taste. Bring to a boil, then reduce the heat and simmer for 15-18 minutes, or until cauliflower is fork-tender.
- Using a colander, strain the cooked cauliflower and place it into a food processor. Add in the remaining garlic and 2 tablespoon butter; process until smooth and pureed.
- Taste and adjust the seasoning if needed then arrange it into a serving bowl/platter and sprinkle with Fresh Chopped Herbs. Enjoy!
Notes
- Use fresh garlic instead of garlic powder for more authentic flavor.
- Adjust the garlic quantity to suit your preference; 2-3 cloves may be milder than 4-6.
- Butter can be replaced with olive oil if desired.
- Do not overcook cauliflower to avoid watery texture.
- You can add boiled potatoes along with cauliflower for a mixed mash.
