Garlic Butter Pork Chops
Description
The recipe starts by sautéing diced sweet onion and chopped button mushrooms in olive oil until tender, followed by a brief addition of minced garlic for aroma. These vegetables are pushed aside in the skillet to create space for the pork chops, which are seasoned with salt and pepper and browned on each side to develop a caramelized crust.
Lemon zest and pats of butter are added atop the pork, which is then covered and cooked through gently to an internal temperature of 150°F, preserving juiciness. Once rested, lemon juice is squeezed over the chops, brightening the dish.
The pork chops are served topped with the mushroom and onion mixture, garnished with chopped fresh parsley and lemon slices, contributing earthy flavors and fresh acidity. Ingredients
- 1 tablespoon olive oil
- 1 small sweet onion diced small
- 8 ounces button mushrooms chopped
- 3 cloves garlic minced
- 4 pork chops about 1-1/2 inches thick, boneless
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 lemon zested & juiceed
- 2 tablespoons butter divided, unsalted
- parsley finely chopped, for garnish, fresh
- lemon for garnish, slices
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add onion and mushrooms and saute for 4-5 minutes, until tender. Add garlic and cook an additional 30 seconds.
- Move the veggies to the side of the pan.
- Season the pork chops on both sides with salt and pepper. Add pork chops to the center of the skillet and cook for 4 minutes, until well browned. Turn over and cook an additional 2 minutes.
- Zest the lemon and sprinkles the top of each pork chop with some lemon zest and a 1/2 tablespoon pat of butter.
- Cover the pan and cook for 8-10 minutes, depending on the thickness of the pork chops. Use a meat thermometer to check the temperature and remove from heat when pork has reached an internal temp of 150 degrees F.
- Let the pork chops rest for 10 minutes.
- Squeeze lemon juice over pork chops and serve with mushroom and onion mixture on top. I like to add a slice of lemon and chopped parsley on top too.
