Garlic Butter Roasted Shrimp with Parmesan

Ingredients
- 1 lb Shrimp shelled & deveined, extra-large 26/30
- 2 tsp olive oil
- salt sea salt and freshly cracked, to taste
- black pepper sea salt and freshly cracked, to taste
- crushed red pepper fresh, to taste
- 2 tbsp butter salted
- 2 garlic cloves, minced
- 1 tbsp parsley fresh, chopped
Instructions
- Preheat the oven to 400 degrees. Line a baking sheet with tin foil then coat with cooking spray.
- Peel and de-vein the shrimp, making sure to leave the tails on.
- Drizzle the shrimp with olive oil then season both sides with sea salt, freshly cracked pepper, and crushed red pepper flakes, to taste.
- Place into the oven and roast for 4 minutes. Remove from the oven.
- Combine the melted butter with the minced garlic; mix until well combined.
- Drizzle the melted garlic butter over the shrimp then toss to coat evenly.
- Place back into the oven to roast for 4-5 minutes, or until pink and cooked through.
- Remove from the oven and sprinkle the top with freshly grated parmesan.
- Serve immediately with lemon wedges (and cocktail sauce), if desired. Enjoy!
