Garlic Butter Sauteed Clams
Description
Starting with sautéing garlic in unsalted butter to develop a lightly browned aroma, the recipe then incorporates cleaned clams tossed to coat in the garlic butter. White wine and cayenne pepper are added to infuse the shellfish with mild acidity and a touch of heat. Covered cooking allows the clams to steam open rapidly, releasing flavorful broth that blends with the sauce.
Finishing with fresh lemon juice and chopped parsley brightens and balances the dish, enhancing the natural clams' briny flavor. The quick cooking ensures the clams remain tender without overcooking. Serving immediately preserves the sauce’s warm, buttery texture.
Ingredients
- 1 1/2 lbs (750g) manila clams rinsed, scrubbed and cleaned
- 2 tablespoons butter unsalted
- 2 cloves garlic
- 1/4 cup white wine
- 3 dashes cayenne pepper
- 1 tablespoon lemon juice
- 1 teaspoon flat-leaf parsley chopped, Italian
Instructions
- Heat a skillet over medium heat. Add the butter and sauté the garlic until slightly browned. Add the clams to the skillet and quickly toss them with a spatula.
- Add the wine and cayenne pepper. Cover the skillet and let it cook for 1 minute, or until all the clams have opened. Add the lemon juice and parsley, stirring to combine well. Remove from heat and serve immediately.
