Garlic Butter Shrimp and Veggies Skillet

This Garlic Butter Shrimp and Veggies Skillet combines jumbo shrimp with sautéed zucchini, mushrooms, bell peppers, and onion. The shrimp are quickly seared with smoked paprika and thyme, then tossed back with garlic, lemon juice, and fresh parsley for a bright finish. The vegetables remain tender yet maintain slight bite, creating a balanced skillet meal full of flavor and texture.

Description

To prepare the dish, shrimp are first seared in a mixture of olive oil and butter with smoked paprika, thyme, and salt until just pink and cooked through. They are removed, and more butter is added to the pan for sautéing sliced mushrooms, chopped bell peppers, red onion, and zucchini until tender. Garlic is added briefly before returning the shrimp to the pan along with lemon juice and fresh parsley. Tossing the ingredients together brings the flavors into harmony and a light coating of buttery sauce.

This skillet meal is flavorful without complex steps, suitable for a quick dinner or lunch. Serve it alone or with bread or rice to soak up the buttery juices. The combination of spices and fresh lemon balances richness with brightness, making the shrimp and vegetables satisfying and vibrant.
