Description

This recipe simmers peeled garlic cloves in olive oil with sprigs of fresh rosemary over low heat for 30 to 40 minutes. The slow cooking method mellows the pungency of raw garlic, creating tender cloves that can be spread on bread or incorporated into recipes. The garlic-infused oil can also be used as a flavorful drizzle for breads or salads.

  • 3 heads garlic peeled
  • cups olive oil
  • 2 prigs rosemary fresh

Instructions

  1. Cook garlic mixture: Add the peeled garlic cloves, olive oil and fresh rosemary to a small saucepan and cook over low heat for 30-40 minutes, stirring every few minutes. The garlic confit is ready when the garlic is tender and cooked through.
  2. Finish and store: Using a slotted spoon, transfer the cloves to a jar, and pour the oil on top. If not using immediately, close the lid and and place in the refrigerator. It should last about 2 weeks in the refrigerator.

Notes

  • Store garlic confit refrigerated with a sealed lid; do not keep at room temperature.
  • Allow refrigerated confit to warm to room temperature before use as the oil will solidify.
