Description
The process involves heating olive oil on medium low until hot and adding peeled garlic cloves fully submerged. The heat is lowered to maintain a gentle simmer or very low heat, allowing the garlic to slowly cook for 30 to 45 minutes until tender when pierced with a fork. This low-temperature cooking prevents browning or burning and produces a soft, spreadable confit garlic.
The confit is stored in a jar with the cooking olive oil in the refrigerator, preserving both garlic and oil for up to two to three weeks. The infused oil can be used in dressings or cooking for additional flavor. Garlic confit offers a mild, rich taste that can be spread on bread, added to sauces, or used as a flavor base.
For variation, fresh herbs like rosemary, thyme, or oregano sprigs may be added to the oil for infusion, as well as chili peppers for some heat. These additions enhance the aromatic profile of the confit without overpowering the gentle garlic notes.

- 3 garlic 200 g of cloves, heads, peeled
- 1 cup olive oil 220 g
Instructions
- Heat the olive oil on medium low heat until hot, then add in all the peeled garlic cloves.
- Make sure the garlic is submerged, add a little extra olive oil if you need to. Reduce the heat to low, and cook for about 30-45 minutes until garlic is fork tender.
- Remove from heat and store in a jar in the fridge with the olive oil you used in the pan for up to 2-3 weeks.
