Garlic Grilled Shrimp Skewers
Description
Large shrimp are coated in a marinade of olive oil, lemon juice, garlic, fresh chopped cilantro and parsley, salt, pepper, and cayenne pepper. The shrimp are marinated for 30 minutes to an hour, allowing the flavors to infuse. They are then threaded onto skewers and grilled over medium-high heat briefly on each side until they turn pink and opaque.
The grilling imparts a slightly smoky flavor and crispness at the edges while keeping the shrimp tender. The garlic and fresh herbs provide a bright, pungent aroma, balanced by the acidity of the lemon and subtle heat from the cayenne.
These skewers make a great appetizer or main dish served with extra marinade spooned on top for additional garlic flavor. They pair well with sides like salads, grilled vegetables, or rice dishes.

Ingredients
- 1 pound Shrimp large
- ¼ cup olive oil
- ¼ cup cilantro finely chopped, fresh
- ¼ cup parsley finely chopped, fresh
- 4 garlic minced, cloves
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper

Instructions
- Mix the marinade. Add the olive oil, lemon juice, herbs, garlic, and spices to a small mixing bowl and whisk together.
- Marinate the shrimp. Place the shrimp in a bowl and pour ¾ of the marinade on top of the shrimp. Mix gently until the shrimp are well coated. Cover the bowl and marinate the shrimp for 30 minutes to an hour.
- Prep the shrimp for grilling. Thread the shrimp on the skewers. Make sure to get all the good garlic and herbs from the bowl and spread on to the shrimp.
- Grill the shrimp. Heat a grill or grill pan on medium high heat. Once the grill is hot, place the shrimp skewers on the grill and cook for 2 to 3 minutes each side, or until they turn pink and opaque.
- Serve. Remove the shrimp to a plate and spoon the remaining marinade on top before serving.
Notes
- Adding reserved marinade after grilling enhances the garlic flavor of the shrimp.
- Use all the marinade during marination if a less intense garlic flavor is preferred.
- Herb choices can vary; parsley, cilantro, basil, thyme, and oregano work well, but avoid rosemary.
- Flat skewers prevent shrimp from rotating when flipping on the grill.
- An indoor grill pan can be used for grilling on the stove if outdoor grilling is not available.
