Description
The recipe starts by cutting sturdy bread like sourdough into uniform cubes about three quarters inch wide. Olive oil is warmed with sliced garlic until just golden and fragrant, careful not to burn to avoid bitterness. The infused oil is drizzled over the bread cubes and tossed to coat evenly.
The coated cubes are spread on a rimmed baking sheet and baked at 375°F until crisp and toasted, flipped occasionally for even browning. After baking, the croutons are tossed with minced Italian parsley, kosher salt, and freshly ground black pepper, which adds bright, fresh flavor and seasoning.
These croutons provide a crunchy texture and mellow garlic flavor making them a versatile garnish for salads and creamy soups where a contrasting crisp is welcome.
Storing the croutons in an airtight container keeps them fresh up to two weeks, and freezing extends shelf life to two months. To re-crisp frozen croutons, bake on a sheet at 300°F until crispy.
Ingredients
- 4 cups bread cubes , cut into ¾ inch squares (from a sturdy bread like sourdough)
- ½ cup extra-virgin olive oil
- 3 garlic thinly sliced, cloves
- 2 tablespoons Italian parsley , minced
- ½ teaspoon kosher salt
- ½ teaspoon black pepper freshly ground
Instructions
- Preheat the oven to 375°F.
- Place the bread cubes in a large bowl and set aside. Heat the olive oil and garlic in a small saucepan over medium heat until the garlic begins to turn golden and becomes fragrant, about 4-5 minutes. Be careful the garlic doesn’t burn or it will taste bitter. Strain or pick the garlic cloves out of the oil and discard or save for another use.
- Drizzle the oil over the bread cubes and toss to coat. Scatter onto a rimmed sheet pan and bake for 10 minutes or until the bread cubes are golden, flipping the cubes occasionally.
- Remove from the oven and add back to the bowl. Toss with the parsley, salt, and pepper and set aside to cool.

- Cook the garlic in oil gently until golden to avoid bitterness and infuse the oil.
