Garlic Kielbasa Grilled Foil Packets

Garlic Kielbasa Grilled Foil Packets combine sliced garlic kielbasa, diced potatoes, peppers, and corn on the cob, all seasoned with olive oil and savory spices, then cooked together on the grill. The foil packets trap steam and flavors, making this dish convenient for outdoor grilling with tender, flavorful results.

Description

This recipe involves slicing fully cooked garlic kielbasa and combining it with chopped potatoes, sweet peppers, and corn on the cob. The mixture is tossed with olive oil, Italian seasoning, garlic powder, onion powder, salt, and black pepper before being portioned into foil packets. The packets are sealed securely to trap moisture and grilled over medium heat for about 24 minutes, flipping halfway through. This cooking method steams and roasts the ingredients simultaneously, which softens the potatoes and melds the flavors.

The finished dish offers a hearty and savory meal with smoky notes from the grill and the aromatic seasoning blend. The kielbasa provides a robust garlicky flavor balanced by the sweetness of the peppers and corn. This can be served directly from the foil packets for an easy cleanup, making it suitable for outdoor parties or quick weeknight dinners.

To check doneness, carefully open one packet and test the potatoes for tenderness. Cook longer if needed while watching closely. The foil also keeps the meal warm until served.

Ingredients

Servings
  • 1 package garlic kielbasa fully cooked
  • 2 potato washed well
  • 2 sweet pepper small; red, orange, or yellow
  • 3 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 ears corn husked, on the cob

Instructions

  1. Preheat the grill to 350F (medium heat).
  2. Slice the kielbasa into 1-inch thick medallions.
  3. Chop the potatoes into 1/2-inch size pieces.
  4. Dice the peppers into small pieces.
  5. In a large mixing bowl, combine the prepared kielbasa, potatoes, and peppers. In a small bowl, whisk together the olive oil and seasonings, then pour over the ingredients in the large bowl; toss to coat everything in the oil and seasonings.
  6. Cut 4 large rectangles of foil. Evenly divide the kielbasa mixture between the 4 pieces of foil. Add 2 pieces of the corn on the cob to each. Fold the foil over the ingredients, then roll and crimp the edges to seal the packet closed.
  7. Grill the packets on one side over medium heat for 12 minutes, then flip over and grill for another 12 minutes. Very carefully open one side of one of the packets and test the potatoes to be sure they are soft. If the potatoes are soft, the packets are finished cooking. If not, continue to grill, checking every few minutes until the potatoes are done.
  8. Cool for 5 minutes, then carefully open each packet and serve.
