Ingredients
- 1 package garlic kielbasa fully cooked
- 2 potato washed well
- 2 sweet pepper small; red, orange, or yellow
- 3 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 ears corn husked, on the cob
Instructions
- Preheat the grill to 350F (medium heat).
- Slice the kielbasa into 1-inch thick medallions.
- Chop the potatoes into 1/2-inch size pieces.
- Dice the peppers into small pieces.
- In a large mixing bowl, combine the prepared kielbasa, potatoes, and peppers. In a small bowl, whisk together the olive oil and seasonings, then pour over the ingredients in the large bowl; toss to coat everything in the oil and seasonings.
- Cut 4 large rectangles of foil. Evenly divide the kielbasa mixture between the 4 pieces of foil. Add 2 pieces of the corn on the cob to each. Fold the foil over the ingredients, then roll and crimp the edges to seal the packet closed.
- Grill the packets on one side over medium heat for 12 minutes, then flip over and grill for another 12 minutes. Very carefully open one side of one of the packets and test the potatoes to be sure they are soft. If the potatoes are soft, the packets are finished cooking. If not, continue to grill, checking every few minutes until the potatoes are done.
- Cool for 5 minutes, then carefully open each packet and serve.
