Description
This recipe uses boneless skinless chicken breasts cut 3/4 through lengthwise to create a stuffing pocket. The filling consists of extra sharp cheddar cheese slices and lemon slices, sealed with toothpicks. The seasoning is a marinade of olive oil, minced garlic, fresh lemon juice, paprika, oregano, cumin, and salt applied inside and outside the chicken to enhance flavor infusion.

Ingredients
- 2 chicken breast boneless skinless
- 4 tbsp olive oil
- 8 cloves garlic minced
- 1 lemon juice of
- 1 lemon sliced
- 1 tsp paprika
- 1/2 tsp salt
- 2 tsp oregano
- 1 tsp cumin
- 8 lices cheddar cheese extra sharp, Cabot
Instructions
- Cut the chicken lengthwise but don’t cut it all the way through, 3/4 way is enough.
- Mix olive oil, minced garlic, lemon juice, salt, paprika, oregano and cumin in a bowl and rub this inside and outside of the chicken.
- Fill inside of the chicken with the cheese slices and the lemon slices. Seal the chicken with toothpicks.
- Preheat the oven to 350F.
- Heat an oven safe pan over medium high heat. Once hot, place the chicken breasts in the pan and sear for about 4-5 minutes on each side. Flip once to have both sides seared perfectly.
- Place the pan in the oven and bake for about 20 minutes until the chicken is cooked perfectly.
- Serve with your desired side dish.
Notes
- If no oven-safe skillet is available, sear chicken in regular pan and finish baking in parchment-lined baking sheet.
- Store leftovers in airtight container and refrigerate up to 3 days; reheat in oven at 250°F until warmed through.
- Pound thicker chicken breasts to even thickness before stuffing for more consistent cooking.
- Do not overbake stuffed chicken to avoid drying out and losing flavor.
