Garlic, Lime & Almond Green Bean Recipe

Ingredients

  • ½ cup almonds slivered
  • 1 tablespoon olive oil
  • 2 cloves garlic chopped
  • 1 pound Green bean rinsed, dried & ends removed, fresh
  • ½ cup water divided
  • 2 tablespoons lime juice (1 - 2 limes)
  • 1 ½ teaspoons corn starch

Instructions

Toasted Almonds

  1. Oven Method: Preheat oven to 350 degrees F. Spread almonds on in a single layer on a baking sheet. Bake for 10 to 15 minutes, flipping once until toasted. Remove from oven and let cool until ready to use.
  2. Stovetop Method: Place a skillet over medium, and add the almonds. Cook for 5-10 minutes, stirring with a wooden spoon until your desired color is reached. Remove from heat and let cool until ready to use.

Green Beans

  1. Heat oil in a large skillet over medium heat. Add chopped garlic and cook 1 minute, stirring often so it doesn't burn.
  2. Add green beans to the skillet along with 1/4 cup water. Cover with lid and allow beans to steam 2 to 3 minutes.
  3. In a small bowl, stir together lime juice and corn starch until smooth.
  4. Pour lime mixture into the skillet along with the remaining 1/4 cup water and toasted almonds.
  5. Stir until green beans are coated and cook for another 1 to 2 minutes.
  6. Pour into a serving bowl and serve warm. I like to save some almonds to sprinkle on top after I put the beans in the bowl.

Notes

  • You can toast the almonds ahead of time, cook them right before making the beans, or let them toast while you make the green beans... if you like to multi-task.
