Garlic Parmesan Cauliflower and Broccoli

Garlic Parmesan Roasted Broccoli and Cauliflower is a quick and easy side dish that's healthy, low carb, and vegetarian.

Ingredients

  • 12 ounces broccoli florets
  • 12 ounces cauliflower florets
  • 2 prays Avocado oil spray
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper ground
  • 4 cloves garlic minced
  • 1/4 cup Parmesan Cheese divided, grated

Instructions

  1. Preheat the oven to 425°F.
  2. Add broccoli and cauliflower florets to a sheet pan in a single layer. Be sure to break apart any large pieces so that it all cooks evenly.
  3. Spray with oil spray until it's lightly coated.
  4. Season the broccoli and cauliflower with salt and pepper.
  5. Roast in the oven for 25 minutes.
  6. Remove from the oven and add the minced garlic. Mix to combine.
  7. Add half of the parmesan and mix to combine.
  8. Put it back in the oven and roast for another 5 minutes.
  9. Remove from the oven and top with the remaining parmesan.

Notes

  • Save time by buying already cut broccoli and cauliflower florets. 
  • Be sure to break apart any extra-large pieces so that it will cook evenly.
