Garlic Parmesan Fries

Garlic Parmesan Fries are oven or air fryer cooked russet potato fries tossed with melted garlic butter, grated Parmesan cheese, and fresh parsley. After soaking the cut potatoes to remove excess starch, they become crisp when cooked, then are coated with aromatic garlic butter and a savory cheese-herb mix. These fries offer a crunchy exterior with tender insides, paired with a rich, garlicky, cheesy flavor that elevates classic fries while making a great side or snack.

Description

To prepare Garlic Parmesan Fries, russet potatoes are cut into quarter-inch fries and soaked in cold water to reduce starch, ensuring crispness. They are then dried thoroughly and cooked in an air fryer at 390°F or baked in the oven, first at 375°F and then at 425°F for a golden finish.

While cooking, butter is melted with minced garlic, which is used to coat the fries once crisp. They are then tossed with grated Parmesan cheese and freshly chopped parsley. The combination results in fries with a crunchy texture outside and tender inside, complemented by a rich garlic butter flavor enriched by the nutty cheese and fresh herb notes.

These fries make an excellent side dish or snack. They can be served immediately for best texture, and leftovers can be reheated briefly in the air fryer to restore crispness.

Adjust cooking times slightly for thicker or thinner fries and cook in batches for larger quantities. Soaking and thorough drying before cooking are key for optimal crispness.

Ingredients

Servings
  • 2 russet potato
  • 2 tablespoons olive oil
  • ½ teaspoon seasoned salt or to taste
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 2 tablespoons Parmesan Cheese grated
  • 1 tablespoon parsley chopped, fresh

Instructions

  1. Scrub potatoes and cut into ¼" fries. Place in a large bowl of cold water and soak 30-60 minutes. Drain well and dab dry with a kitchen towel.
  2. Preheat the air fryer to 390°F (or bake in the oven per directions in the notes).
  3. Toss potatoes with oil and seasoned salt to taste and place in the air fryer basket.
  4. Cook 10 minutes, shake/flip and cook an additional 6-8 minutes or until crisp.
  5. While potatoes are cooking, place butter and garlic in a small dish and melt in the microwave until heated.
  6. Once potatoes are crisp, remove them from the air fryer and place in a large bowl. Add garlic butter and toss well to combine. Add parmesan and parsley and toss.
  7. Serve immediately.

Notes

  • Adjust cooking time depending on the thickness of fries; thicker fries need more, thinner less.
  • Cook in smaller batches when making larger quantities to ensure even crisping.
  • Leftover fries re-crisp well when reheated in a preheated air fryer at 390°F for 3-5 minutes.
  • Oven method: bake at 375°F for 20 minutes, then increase to 425°F and bake an additional 20-25 minutes for a crispy finish.
