Ingredients

Servings
  • 4 pork chops about 1-inch thick, boneless
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Garlic Parmesan Crust:

  • ¼ cup Parmesan Cheese grated
  • 2 cloves garlic minced
  • 1 tablespoon parsley chopped, fresh
  • 1 tablespoon olive oil

Instructions

  1. Prepare pork chops: Pat the pork chops dry with paper towels. Season them with salt and pepper.
  2. Make garlic Parmesan crust: In a small bowl, combine the Parmesan cheese, minced garlic, chopped parsley, and olive oil. Mix well.
  3. Sear pork chops: Heat the olive oil in a large skillet (preferably cast iron) over medium-high heat. Add the pork chops and sear for 3-4 minutes per side, or until golden brown.
  4. Add garlic Parmesan crust: Reduce heat to medium. Spread the garlic Parmesan mixture evenly over the top of each pork chop. Cook for another 3-5 minutes, or until the pork chops are cooked through and the internal temperature reaches 145°F (63°C) for medium. Use a meat thermometer to ensure they are cooked to a safe temperature.
  5. Rest: Remove the pork chops from the skillet and let them rest for 5 minutes before serving. This allows the juices to redistribute, resulting in more tender pork.
  6. Serve: Serve the Garlic Parmesan Pork Chops immediately.

Notes

  • Pork Chops: Use boneless pork chops that are about 1-inch thick for best results. Thicker chops will require longer cooking times.
  • Parmesan Cheese: Use freshly grated Parmesan cheese if possible, as it melts better than pre-grated cheese.
  • Garlic: Fresh garlic is essential for the flavor of this dish.
  • Don't Overcook: Overcooked pork chops will be dry and tough. Use a meat thermometer to ensure they are cooked to the proper internal temperature. A slight pink tinge is acceptable at 145°F.
  • Resting: Resting the pork chops before serving is important for keeping them juicy.
