Garlic Parmesan Wings
Description
The recipe uses party-style chicken wings tossed with a mixture including baking powder, salt, and spices to create a crispy skin when baked at 400°F on a rack. The baking powder raises the pH of the skin, improving browning and texture without frying. After about 45 minutes of baking, the wings become golden and crisp on all sides.
Meanwhile, a garlic butter sauce is prepared by melting butter with minced garlic and allowing it to cool before stirring in chopped parsley and grated Parmesan cheese. The hot, crispy wings are then coated in this sauce, which adds a rich, savory flavor and melted cheese taste to balance the spices and crunch of the skin.
This combination yields wings that are flavorful and textured, suitable as an appetizer or main dish. Baking on a rack allows fat to drip below, preventing sogginess and promoting even cooking.
Party-style wings are pre-cut into drumettes and flats; if unavailable, regular wings can be halved. If a rack is not available, baking on foil with cooking spray and flipping halfway through can help crispiness.
Ingredients
- 3 pounds chicken wings party style
- 1 tablespoon baking powder do NOT use baking soda
- 1 1/4 teaspoons kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 cup butter
- 2 teaspoons garlic minced
- 2 tablespoons parsley chopped
- 3 tablespoons Parmesan Cheese grated
Instructions
- Preheat the oven to 400 degrees. Line a sheet pan with foil and place a non stick oven safe rack on top of the pan.
- Place the chicken wings in a large bowl. Add in the baking powder, salt, pepper, garlic powder and onion powder.
- Toss to coat the chicken evenly with the baking powder and spices.
- Place the wings on the rack in a single layer.
- Bake for 45 minutes or until wings are golden brown and crispy.
- Place the butter and garlic in a small bowl. Microwave in 30 second increments until the butter is melted.
- Let the butter cool for 2-3 minutes, then stir in the parsley and parmesan.
- Pour the butter mixture over the wings and toss to coat. Serve immediately, with a dipping sauce of your choice if desired.
Notes
- Use party-style wings for uniform pieces; if unavailable, cut whole wings in half to mimic.
- Baking on a wire rack helps the skin crisp; without one, spray foil and flip wings halfway through cooking.
- Do not substitute baking powder with baking soda, as it will affect texture and browning adversely.
