Garlic Potatoes are thinly sliced potatoes baked with unpeeled crushed garlic cloves and butter in a cast iron skillet until tender and golden. Description

The preparation begins by preheating the oven to 400°F. Thin slices of peeled potatoes, ideally cut to 1/8 inch thickness and kept together, are arranged in a round pattern in a butter-coated cast iron skillet. Unpeeled garlic cloves, with their hard ends removed and crushed, are tucked between the potato slices to release aroma during baking. The potatoes are brushed with melted butter and seasoned with salt and black pepper before baking for 30 to 40 minutes until tender and golden brown.

Using unpeeled garlic cloves infused the potatoes with a gentler garlic flavor as they roast, while the butter ensures richness and helps achieve a golden crust on the edges. The thin slicing allows the potatoes to cook uniformly without becoming dry.

  • 4 potato peeled and thilny sliced potatoes, small
  • 7 garlic unpeeled, hard end remove garlic clove crushed
  • 6 tablespoons butter unsalted
  • salt
  • black pepper

Instructions

  1. Preheat oven at 400°.
  2. If you have a mandoline, slice the potatoes to 1/8 of an inch. Keeping the slices together.
  3. Swirl some of the melted butter on the bottom and sides of a cast iron skillet.
  4. Place the potatoes in a round in the skillet. Insure that all the slices are evenly spaced. Tuck the garlic cloves among the slices.
  5. Brush the potatoes with the remaining melted butter and sprinkle generously with salt and pepper.
  6. Bake in the hot oven for approximately 30 to 40 minutes or until tender and golden brown.
  7. Can be garnished with thyme if served alongside meat and poultry, or rosemary if served along side lamb chops with rosemary. (optional)
