Description

This recipe transforms halved cherry tomatoes tossed in olive oil and finely grated garlic into a rich, concentrated ingredient through long, slow roasting at 350°F. The tomatoes become partially dehydrated and shriveled, concentrating their natural sugars and developing a soft yet slightly chewy texture. Properly grating or mincing the garlic into a paste ensures it infuses flavor evenly without burning during roasting.

Once roasted, the tomatoes are brightened with chopped fresh basil and finished with a drizzle of balsamic glaze, adding sweetness and acidity to balance the roasted flavors. This preparation works well as a condiment, side dish, or to enrich pasta and salads.

  • 4 cups cherry tomato cut in half
  • 2 tablespoons olive oil
  • 1-3 teaspoons garlic garlic that's been grated on a Microplane - see notes, paste
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 tablespoons basil chopped
  • 1 tablespoon balsamic glaze

Instructions

  1. Preheat your oven to 350 degrees. Line a baking sheet with parchment paper.
  2. Add the cherry tomatoes, olive oil, garlic, salt, and pepper to a medium-sized bowl and mix well. Transfer the tomatoes to a baking sheet and spread them out so that they are in a single layer. 
  3. Roast the tomatoes for 1 - 1 ¼ hours, or until they are shriveled and partly dehydrated. 
  4. Serve the tomatoes topped with basil and a drizzle of balsamic glaze. 

Notes

  • It's important that the garlic is either grated or minced into a paste as bigger chunks will burn.
