Description

This recipe starts by making horizontal cuts in baby potatoes to allow seasoning to penetrate.   • 1 pinch salt
  • 1 pinch cayenne pepper
  • 3 dashes black pepper ground
  • 1 tablespoon parsley for garnishing, chopped

Instructions

  1. Preheat the oven to 425°F (218°C).
  2. Place each potato on a wooden spoon and cut horizontal slits into them. In a small bowl, combine the butter, olive oil, garlic, salt, cayenne pepper, and black pepper. Stir well to combine. Toss the potatoes with the garlic mixture, ensuring they are well coated and that the mixture gets inside the slits. Transfer the potatoes to a roasting pan.
  3. Roast the potatoes for 15 minutes, then turn them over and baste with the garlic oil. Continue roasting for another 15 to 20 minutes. Remove from the oven, garnish with parsley, and serve immediately.
