Garlic Roasted Potatoes Recipe
Description
Garlic Roasted Potatoes are prepared by quartering red potatoes and tossing them with olive oil, minced garlic, Parmesan cheese, dried thyme, salt, and black pepper. Baking at 400°F in a greased dish for about 45-55 minutes produces crispy, golden exteriors and tender interiors. Tossing once during baking ensures even cooking and browning.
The Parmesan adds a subtle savory crust and depth to the garlic’s pungency. Dried thyme lends an herbaceous backdrop that complements the richness of the cheese and oil, while fresh parsley provides a contrasting brightness when sprinkled before serving.
This side dish pairs well with a range of mains and can be served warm. It's straightforward to prepare and highlights classic, familiar flavors enhanced by the garlic-Parmesan-thyme combination.
Leftovers can be refrigerated for up to five days in an airtight container and reheated in the oven or toaster oven to retain crispness; microwave reheating is possible but softens the texture. Potatoes can also be frozen after initial roasting, frozen solid in a single layer before transferring to a bag, and stored up to three months to preserve quality. The recipe can be prepped in advance for convenience.
Ingredients
- 4 pounds potato quartered, red
- ¼ cup olive oil

Notes
- Store leftovers in an airtight container in the fridge for up to 5 days; reheat in oven or toaster oven for best texture.
- Potatoes can be frozen after roasting by freezing in a single layer, then transferring to a container; keep frozen up to 3 months.
- To reheat from frozen, bake in the oven until hot and crisp again.
- Prepare the potatoes ahead and roast them about 30 minutes before serving to save time on mealtime.
