Garlic Rosemary Grilled Lamb Chops
Description
The recipe begins with slicing a rack of lamb into individual chops. The marinade is prepared by combining extra-virgin olive oil, minced garlic, finely chopped fresh rosemary, kosher salt, and ground black pepper. The lamb chops are coated evenly with this mixture and chilled for 30 minutes to absorb the flavors.
Grilling the chops over medium-high heat for about three minutes each side yields a medium-rare doneness with a flavorful crust and a tender interior. Resting the chops briefly after grilling allows juices to redistribute for moistness. The combination of garlic and rosemary pairs classically with lamb’s rich profile, enhanced by slight charring from the grill.
These chops can be served simply as a main dish or complemented with sauces such as a mint apple sauce for added brightness. Leftovers keep well refrigerated or can be frozen for several months.
Proper resting and marinade time contribute notably to the final texture and flavor, ensuring each chop is well-seasoned and juicy.
Ingredients
- 1 rack of lamb (8 lamb chops)
- ¼ cup extra-virgin olive oil
- 3 garlic minced, cloved
- 1 tablespoon rosemary finely chopped, fresh
- 1 teaspoon kosher salt
- ½ teaspoon black pepper ground
Instructions
- Cut the lamb chops. Slice the rack of lamb into individual chops.
- Make the marinade. In a small bowl, stir together the olive oil, garlic, rosemary, salt, and pepper.
- Marinate the lamb chops. Place the lamb chops in a baking dish, pour the marinade on top and make sure both sides are well coated. Marinate for 30 minutes in the fridge.
- Grill the lamb chops. Heat an outdoor grill or indoor grill pan over medium-high heat. Place the lamb chops on the grill for approximately 3 minutes each side, or until an instant-read thermometer reaches 135°F (57°C) for medium-rare. Let the chops rest for a few minutes, then enjoy. You can also serve them with my mint apple sauce for a great mint jelly alternative.
Notes
- Store leftover lamb chops in the refrigerator for up to 3-4 days or freeze for up to 3 months.
- Allow lamb chops to rest after grilling to keep them juicy and tender.
- Prepare and serve with a mint apple sauce as an alternative to traditional mint jelly.
