Garlic Sautéed Swiss Chard

Garlic sautéed Swiss chard involves cooking sliced chard stems and leaves with minced garlic and olive oil, using water to help soften the stems. The dish results in tender, flavorful greens with a mild garlic accent and retains some texture from the stems. It is seasoned simply with kosher salt and makes a versatile vegetable side for various meals.

Description

Garlic Sautéed Swiss Chard starts by separating and slicing the chard stems and rolling then slicing the leaves into strips. The garlic and olive oil are sautéed briefly to infuse flavor, followed by cooking the stems with water until they soften, then the leaves are added and cooked until wilted. This technique allows the tougher stems to become tender while the leaves retain a pleasant, slightly silky texture.

The resulting dish offers a balance between crisp-tender stems and softened leaves, enhanced by the mellow garlic and the mild seasoning of kosher salt. The process uses gentle sautéing and steaming with water to achieve a well-cooked green without overcooking.

This preparation can be served as a simple side vegetable, complementing a wide range of main dishes. The lightly garlicky, tender chard adds color and nutrition to meals without heavy sauces or spices.

Ingredients

Servings
  • 1 swiss chard approximately 6 to 8 stems, bunch
  • 1 tablespoon olive oil
  • 3 garlic minced, cloves
  • ¼ cup water
  • kosher salt to taste

Instructions

  1. Prep the Swiss chard. Remove the stems at the bottom of the leaves and slice them up. Roll the leaves into a cigar-like shape and slice across horizontally into one-inch wide strips.
  2. Cook the garlic and stems. Heat the olive oil in a sauté pan on medium heat. Add the minced garlic and sauté for 30 seconds. Then, add the water and chard stems and cook for 1 to 2 minutes, until softened.
  3. Add the leaves. Cook for an additional 4 to 5 minutes, until the chard leaves wilt down.
  4. Serve. Before serving, sprinkle with kosher salt, to taste.

Notes

  • Use a high-quality sauté pan for even cooking and better heat control during preparation.
  • Choose a quality sea salt, such as Himalayan salt, to enhance flavor without overpowering the greens.
