Garlic Shrimp and Peas
Description
This dish begins by melting unsalted butter in a skillet, then gently cooking minced garlic and diced shallot until fragrant. White wine is added and reduced slightly to concentrate flavor. Medium-sized peeled and deveined shrimp are added, seasoned with kosher salt and freshly ground black pepper, and cooked 3 to 4 minutes until pink and just done. English peas are then stirred in, warming through to provide a fresh pop of sweetness and contrasting texture.
Fresh chopped dill and chives add herbal brightness, while fresh lemon juice and zest give a citrus lift balancing the buttery, garlicky richness. The quick cooking time preserves the shrimp's tenderness and the peas' freshness. The dish is meant to be served immediately to enjoy the contrast of warm shrimp and fresh herb accents.
