  • 19 oz cheese tortellini thawed, frozen
  • 1 1/2 c. pea
  • 2 Tbsp olive oil
  • 1 lb Shrimp peeled and deveined, uncooked, medium size
  • 3 garlic minced, cloves
  • 1/2 tsp salt
  • 1/2 tsp thyme dried
  • 1/4 tsp black pepper

Instructions

  1. Prepare tortellini according to package directions. During the last 5 minutes of cooking add peas. Drain.
  2. While Tortellini is cooking heat olive oil over medium-high heat in a large skillet. Add shrimp to skillet and cook for 2 minutes. Add garlic to mixture and cook another 2 minutes or until shrimp turn pink.
  3. Add tortellini mixture to skillet and stir in seasonings. Toss to coat.

  • Thaw frozen shrimp overnight in the refrigerator or submerge in ice water for about 30 minutes before cooking.
