Garlic Smashed Potatoes

Garlic Smashed Potatoes are tender baby red potatoes boiled until soft, gently smashed flat, then seasoned with garlic powder, salt, and pepper before being roasted until crisp and golden on the edges. The contrast between the creamy interior and the crisp exterior makes them a satisfying side dish with a pronounced garlic flavor.

Description

The recipe begins by boiling baby red potatoes until they are very tender and easily pierced by a fork. After draining, they are spread on a baking sheet and gently smashed to roughly half an inch thickness using a masher or glass bottom. A seasoning mix of garlic powder, salt, and ground black pepper is evenly sprinkled over each potato. Olive oil is drizzled generously to promote browning and crispiness.

Baked at a high temperature, the potatoes develop browned, crispy edges while maintaining a soft, creamy center. This textural combination delivers a pleasing mouthfeel and a savory garlic accent from the seasoning blend. They can be served hot as a versatile accompaniment to many main dishes.

Seasonings can be adjusted to taste starting from the given amounts. Leftover smashed potatoes should be stored in airtight containers and can be refrigerated for 3 to 4 days or frozen up to a month. Reheating may be done in a microwave or oven, covered with foil to retain moisture.

Ingredients

Servings
  • 24 oz red potatoes baby
  • 1/4 cup olive oil + 1 Tbsp extra, virgin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper ground

Instructions

  1. Boil the potatoes about 20-30 minutes or until the fork not only can pierce the potato, but they are very tender. Then drain the potatoes in a colander.
  2. Mix the garlic powder, salt and pepper together in a small bowl.
  3. Spread 2 tbsp of olive oil on a baking sheet so that it is completely covered, then arrange the potatoes on the cookie sheet so that they are evenly spaced.
  4. Use a potato masher or the bottom of a glass to smash each potato until it is about 1/2 inch thick. Then sprinkle the seasoning directly on top of each potato and finish by drizzling the remaining olive oil over each potato generously.
  5. Bake at 425˚F for 25-30 minutes or until the edges of the potatoes are browned and crispy. Serve hot and enjoy!

Notes

  • Seasoning amounts can be modified to taste to adjust garlic and spice levels.
  • Store leftovers in airtight containers: refrigerate up to 4 days or freeze up to one month.
  • Reheat in microwave in short bursts or oven covered with foil to maintain moisture.
