Description

Garlic Sour Cream Mashed Potatoes start with potatoes boiled until very tender, either peeled or with skins left on according to preference. These are mashed together with sour cream, half and half or heavy cream, butter, and garlic, creating a creamy and flavorful base. The garlic provides a mild pungency that complements the rich dairy, while the potato skins offer texture and rustic character. The salt and pepper seasoning rounds out the flavor.

Ingredients

Servings
  • 2 pounds potatoes cut into 2 inch pieces, (you can peel them but I never do - I love potato skins in my mashed potatoes!)
  • ½ cup sour cream (light is okay, regular will yield richer flavor)
  • ¼ cup half and half or heavy cream
  • 4 teaspoons garlic or 2 teaspoons garlic powder, minced
  • 3-4 tablespoons butter
  • salt I use about 1 ½ teaspoons salt and ¼ teaspoon black pepper, to taste
  • black pepper I use about 1 ½ teaspoons salt and ¼ teaspoon black pepper, to taste

Instructions

  1. Place potatoes in a large pot and cover potatoes with water. Bring to a boil on the stove, cover and boil until potatoes are very tender and easily pierced with a fork. Drain and transfer potatoes to a large bowl (see note).
  2. Add sour cream, milk ( half and half or heavy cream), garlic, butter, and salt and pepper to bowl. Mash til desired texture is achieved. Serve hot.

Notes

  • Potatoes can be cooked in a slow cooker as an alternative to boiling before mashing.
  • Leaving potato skins on adds texture and nutrients, but peeling is optional.
  • Choose light or regular sour cream to adjust richness.
