Garlic Soy Sauce Chicken Recipe

Make dinner exciting again with Garlic Soy Sauce Chicken! This recipe mixes the unexpected sweetness of mango soda with soy sauce and spice.

Ingredients
- 8 boneless skinless chicken thighs
- 1 12- oz. bottle of Mango Soda Jarritos brand works great
- 1/2 cup soy sauce
- 1 tablespoon fish sauce
- 1 tbsp. garlic powder
- 1 tbsp. ground coriander
- 2 tsp. pure chili powder

Instructions
- In a large bowl, combine the soda, soy sauce, fish sauce, garlic powder, coriander, and chili powder.
- Add the chicken thighs and toss to coat. Make sure each piece of chicken is submerged, cover the bowl with plastic wrap, and refrigerate overnight.
- Remove the chicken from the fridge at least 30 minutes prior to cooking.
- Preheat your grill to medium-high heat (I set mine to 375°F/190°C). When hot, place your chicken thighs on the grill and close the lid.
- Let them cook for 8-10 minutes or until cooked through, turning once.
- Remove from the grill and let rest for 3-5 minutes. Serve with rice tossed with cilantro lime and/or marinated onions.
Notes
- To store Garlic Soy Sauce Chicken leftovers, place the cooled chicken in an airtight container and refrigerate for up to 4 days. You can also freeze it for up to 3 months.
- To reheat, thaw if frozen, and then warm in a preheated oven at 350°F (175°C) for 15-20 minutes, or until heated through. Alternatively, you can microwave on medium power in short bursts, checking frequently to avoid overcooking.
