Garlic Steak and Potato Foil Packs
Description
This recipe features sirloin steak trimmed and cut into thick pieces paired with yellow potatoes cut into quarters or smaller. The ingredients are coated in olive oil, minced garlic, salt, pepper, and a blend of dried herbs including onion powder, oregano, parsley, and thyme. The mixture is divided into foil sheets to form sealed packets.
Cooking is done either by grilling over high heat for about 20 minutes total, flipping halfway, or by baking at 425°F for 20-25 minutes. The foil packs trap steam and heat, helping the steak cook evenly while the potatoes become tender without drying out. Fresh herbs can be added after cooking for an aromatic finish.

Ingredients
- 2-2 ½ pounds sirloin steak trimmed of fat and cut into 2 ½-inch pieces, (see note, top

- 3 tablespoons olive oil
- salt I use about 1 teaspoon salt and ¼ teaspoon black pepper, to taste

- 1 tablespoon garlic minced
- 1 teaspoon onion powder
- 1 teaspoon oregano dried
- 1 teaspoon parsley dried
- 1 teaspoon thyme dried

Instructions
- In a large bowl combine steak, potatoes, olive oil, salt and pepper, garlic, and seasonings and toss to combine.
- Divide steak and potatoes between four 12x12 inch sheets of foil, then wrap the foil tightly around the contents to form your foil packs. Grill over high heat for about 10 minutes on each side or until steak and potatoes are cooked through OR bake at 425 degrees for about 20-25 minutes until cooked through to desired doneness (see note).
- Garnish with fresh thyme or parsley and serve immediately.
Notes
- Cut steak into pieces about 2 ½ inches and potatoes less than 1 inch for even cooking.
- Boiling potatoes for 5 minutes before packing helps achieve medium doneness on steak while ensuring potatoes cook fully.
- For a grilled char, open foil packets near the end and cook directly over heat or broil briefly after baking.
