Garlicky Roasted Potatoes with Herbs

Ingredients
- 1 tbsp olive oil
- 2½ cups baby potatoes
- 1 tsp thyme fresh leaves
- salt to taste, sea salt and freshly cracked
- black pepper to taste, sea salt and freshly cracked
- Pinch crushed red pepper flakes to taste
- 1 tbsp butter
- 3 cloves garlic minced
- lemon zest from one lemon
- 1 tbsp parsley finely chopped, fresh
Instructions
- Preheat the oven to 450 degrees. Coat a large baking dish with olive oil cooking spray.
- Place the potatoes in the prepared baking dish and toss them with olive oil, thyme, sea salt, and freshly cracked pepper, to taste until well coated.
- Place into the oven and roast for 35-40 minutes or until fork-tender inside and crispy outside.
- While the potatoes are roasting, combine the melted butter, minced garlic, lemon zest, and parsley.
- Once the potatoes are fork-tender, remove them from the oven and drizzle with the garlic butter; toss to coat evenly.
- Return to the oven for 2-3 minutes.
- Remove and serve immediately. Enjoy.
