Gazpacho Soup Recipe

Gazpacho Soup blends fresh tomatoes, cucumber, bell pepper, onion, and jalapeño with herbs and seasonings to create a chilled, refreshing tomato-based soup. The combination of red wine vinegar, lime juice, and spices gives it a balanced tangy and mildly spicy flavor. Served cold, gazpacho is a vibrant, light dish ideal for warm weather or as a flavorful appetizer.

Description

This Gazpacho Soup Recipe uses ripe tomatoes peeled and chopped combined with diced cucumber, red onion, red bell pepper, and jalapeño for a fresh vegetable base. Parsley, chives, and garlic paste add herbal and pungent notes. The soup includes red wine vinegar, balsamic vinegar, and lime juice for acidity, balanced with sugar and salt to round out the flavors. Ground cumin and hot sauce contribute warmth and subtle spice.

Ingredients are blended together to reach preferred smoothness, usually with some chunkiness remaining for texture. The soup is then chilled for several hours or overnight, allowing flavors to meld and deepen. Gazpacho is typically served cold as a refreshing light meal or starter during warmer months.

  • 2 tsp salt
  • ½ tsp black pepper ground
  • 6 hot sauce to taste
  • 1 tsp Worcestershire sauce

Instructions

  1. Mix all ingredients in a large bowl. Using an immersion blender or blender in batches, blend to desired smoothness. We prefer ours somewhat chunky so we only pulse a few times in a blender.
  2. Adjust seasonings to taste.
  3. Chill in covered container at least several house before servings or overnight to allow the flavors to blend.
