Genius Potato, Turkey and Stuffing Layered Leftovers: Better than Thanksgiving Day's Dinner!
Description
The Genius Potato, Turkey and Stuffing Layered Leftovers dish builds a casserole starting with a buttered and breadcrumb-sprinkled baking dish. Mashed potatoes mixed with eggs form the first and third layers, ensuring structure and creaminess. Between the potato layers is a layer of leftover turkey, which can be chopped into bite-sized pieces. The top layer is a generous amount of leftover crumbled stuffing, which crisps during baking.
Baking covered with foil keeps moisture in during the initial heating, then uncovering the dish crisps the stuffing topping with a golden brown finish. The dish blends moist, creamy, and crunchy textures, with familiar savory flavors from classic Thanksgiving components combined in a layered format.
This casserole can be served alongside traditional sides such as gravy and cranberry sauce or green beans, extending the holiday meal experience into another occasion. It can be made in individual portions using ramekins, adjusting cooking times accordingly.
The recipe notes recommend using Idaho potatoes for best results in the mashed layer and mention a gluten-free option by omitting breadcrumbs or using gluten-free stuffing. Adjusting turkey quantity allows flexibility based on availability of leftovers.
Ingredients
- 4 cups potato leftover (use Idaho® Potatoes for best results, mashed
- 2 egg
- ½ Tbsp butter
- ½ Tbsp breadcrumbs sprinkled on dish (omit for gluten-free)
- 8 lices turkey leftover (can be chopped into bite sized pieces)
- 2 cups stuffing leftover, crumbled (for gluten-free version, use a gluten-free stuffing)
Instructions
- Preheat oven to 350º F (175℃).
- Butter a 9x9" (23 cm x 23cm) ovenproof dish and sprinkle the bottom with some breadcrumbs; set aside.
- Prepare the potatoes by adding 2 eggs, one at a time, and mixing well, before adding the second
- Spread half of the potatoes into the breadcrumb sprinkled dish.
- Next, layer turkey pieces all over the top of the mashed potatoes.
- Spread the remaining mashed potatoes on top of the turkey layer, and top with a generous amount of leftover stuffing, so that the potatoes are completely covered. Press down a little with a fork.
- Cover with aluminum foil (I rubbed a little olive oil on the inside of the foil, so it wouldn't stick to the dressing) and bake in preheated oven for 30 minutes.
- Remove foil, and continue to bake for another 10 to 15 minutes or until the stuffing begins to get crispy and golden brown.
- Remove from oven and allow to cool for five minutes before serving.
- Here's another great idea: make individual servings of potato, turkey and stuffing layered leftovers in ramekins!
Notes
- For individual portions, bake covered for 20 minutes and uncovered for 8 minutes using small ramekins.
- Use Idaho potatoes for best mashed potato texture in the dish.
- This dish pairs well with turkey gravy, cranberry sauce, and green beans for a fuller meal.
- To accommodate gluten-free diets, omit breadcrumbs and select gluten-free stuffing.
- Adjust turkey amounts based on leftover availability.
