Impress your guests at the next BBQ with this creamy pasta salad made with pesto -- and without mayo! It's lighter, thanks to Greek yogurt, and full of flavor from herby pesto. It's loaded with texture from fresh veggies and al dente pasta - and will quickly become a summertime favorite!

Ingredients
Dressing
- 1 1 cup basil pesto
- 1 1 cup Greek yogurt
- 1 1 T white wine vinegar
- 2 2 T olive oil
- ½ ½ tsp fine sea salt
- freshly ground black pepper to taste
Other Ingredients
- 1 1 pound dried macaroni pasta
- 1 1 dry pint grape tomatoes halved
- 1 1/2 1 1/2 cup cucumber small dice
- 8 8 ounces Mozzarella pearls
- ½ ½ cup sliced kalamata olives optional
- 1 1/2 1 1/2 cup frozen peas thawed
- 1/2 1/2 cup shallot diced
- ½ ½ cup grated Parmesan cheese
- ⅓-½ ⅓-½ cup fresh basil chiffonade

Instructions
- Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Do not overcook! Drain and rinse with cold water.
- Meanwhile, whisk together the dressing ingredients until combined.
- Toss the cooked pasta with the dressing until coated. Then, toss in the remaining veggies and cheese. Reserve the basil until immediately before serving.
- If possible, chill the pasta salad for 2-3 hours, or overnight. Serve with fresh basil and additional parmesan cheese, as desired. Enjoy!
Notes
- Salt: the dressing should be saliter than a normal vinaigrette because it's flavoring all the raw veggies, but do taste test your pesto to be sure it's not too salty.
