These Greek yogurt brownies are incredibly rich, decadent, fudge like and gooey! They have a delicious unique flavor. These homemade high protein brownies are easy, quick and healthy. Only one mixing bowl and a handful of wholesome ingredients needed!

Ingredients

  • ½ cup Melted dark chocolate
  • cup coconut sugar or white sugar or monk fruit sweetener
  • 1 cup vanilla Greek Yogurt
  • ¾ cup dairy free milk
  • cup cocoa powder
  • ¾ cup flour all purpose or gluten free
  • ½ tsp baking soda
  • ¾ cup dark chocolate chips

Instructions

  1. First, preheat oven to 350 degrees Fahrenheit. Line an 8 inch by 8 inch pan with parchment paper.
  2. In a mixing bowl, add melted chocolate, Greek yogurt and coconut sugar. Stir to combine.
  3. Then, pour in milk. Stir until a runny batter forms.
  4. Add in flour, cocoa powder and baking soda. Stir to combine.
  5. Fold in chocolate chips. Batter will be very thick like cheesecake filling.
  6. Transfer batter to the lined pan. Spread into one even layer.
  7. Bake for 20 to 22 minutes or until just barely set in the middle. These brownies will firm up slightly as they cool.
  8. Finally, remove from oven. Allow brownies to fully cool before slicing.

Notes

  • Feel free to use coconut sugar, white sugar, brown sugar, or monk fruit sweetener for a low carb option.
  • Use vanilla Greek yogurt.  Unsweetened yogurt may be used as well, but these brownies will not be quite as sweet.
  • Dairy free yogurt can be used, but please choose a very thick brand.
  • Both all purpose flour and gluten free 1 to 1 flour can be used.  I use gluten free flour.
  • The brownie batter will be very thick.  It is similar to a thick mousse or thick cheesecake filling batter.
  • Do not over bake.  The brownies will look gooey and underdone, but they set up as they cool.
  • Store in the fridge for up to 4 days.
  • Freeze for up to 1 month if needed.
