These latte cookies are warmly spiced, perfectly sweet and buttery. They have the look and feel of a thick sugar cookie. The blend of chai latte spices is so warm and cozy!

Ingredients
- 1 cup cold butter
- 1 cup granulated sugar
- 1 egg
- 1 egg yolk
- 1 tsp vanilla extract
- 2 ½ cups flour gluten free or all purpose
- 1 tsp baking powder
- pinch sea salt
- ½ tsp cinnamon
- ½ tsp ground ginger
- ¼ tsp ground cloves
- pinch nutmeg
Sugar Coating
- ⅓ cup granulated sugar
- ½ tsp cinnamon
- ½ tsp ground ginger
- ¼ tsp ground cloves
- pinch nutmeg
Instructions
- First, preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
- Make sugar coating. Mix sugar coating ingredients together in a shallow bowl. Set aside.
- In the bowl of a stand mixer, add cold butter and sugar. Mix on high for 2 to 3 minutes, until no clumps of butter remain.
- Then, add in egg, egg yolk and vanilla. Stir to combine.
- Add all remaining ingredients. Stir to combine.
- Use a cookie scoop to scoop balls of dough. Place each ball of dough in sugar coating mixture. Roll around until completely covered.
- Then place on baking sheet. Press down slightly on each ball of dough to create a cookie shape. Repeat for remaining dough.
- Bake cookies for 10 to 11 minutes or until just barely set in the middle.
- Finally, remove from oven. Allow cookies to cool for 5 minutes on pan before removing.
Notes
- Use cold butter straight from the fridge. This prevents the cookies from spreading too much.
- Beat the butter and sugar until completely combined. There should be no clumps of butter remaining in the batter.
- The cookie dough will be relatively thick.
- Feel free to adjust amounts of spices.
- Flatten each ball of dough. These cookies do not spread much while baking.
- Store cookies in an airtight container for up to 3 days at room temperature.
- They freeze well.
