This Paleo Apple Cobbler is incredibly flavorful, easy to make, and healthy! This gluten free cobbler has a sweet juicy apple filling and a delicious cobbler topping. It is easy enough to make for any occasion!

Ingredients
Bottom Layer
- 4 cups apples peeled and sliced
- 1.5 tbsp coconut sugar
- 1 tbsp cinnamon
- pinch sea salt
- 1/4 tsp nutmeg
- 1 tsp tapioca flour
- 2 tsp lemon juice
Cobbler Topping
- 1 cup almond flour
- 1/2 cup tapioca flour
- 3 tbsp coconut sugar
- pinch cinnamon
- 1 tsp baking soda
- 1/4 cup coconut oil melted
- 2 tbsp dairy free milk I used almond
Instructions
- First, preheat oven to 375 degrees Fahrenheit.
- Make the cobbler topping first. Add all cobbler topping ingredients to a mixing bowl and stir to combine.
- Place cobbler topping in fridge while you make the bottom layer.
- Peel, core and slice apples into 16 pieces. Then, add apples to a large mixing bowl.
- Add all bottom layer ingredients to the bowl with the apple slices. Toss until apples are completely coated.
- Lightly spray a pie plate with nonstick spray. Then, pour apple mixture into dish.
- Remove cobbler topping from fridge. Form 4 or 5 discs of dough and place those on top of apples.
- Place a sheet of aluminum foil lightly covering the pie dish. Do not press tin foil onto cobbler topping.
- Bake for 20 minutes. Then, carefully remove tin foil and bake an additional 5 minutes or until apples are fork tender.
- Finally, remove from oven and serve!
Notes
- Cobbler topping dough will be a little crumbly. This is normal!
- Slice apples into evenly sized pieces.
- Toss apples and bottom layer ingredients until apples are completely covered.
- Form cobbler topping dough into 4 or 5 evenly sized discs.
- Bake until apples are fork tender.
