Get the Recipe: Paleo Sugar Cookies

These Paleo sugar cookies are so fun and festive! This recipe is great for any holiday or celebration, or just any old rainy day. The dough is easy to work with and they taste just like classic sugar cookies!

Ingredients

  • 1 cup almond flour
  • ¼ cup coconut flour
  • 2 tbsp grass fed butter or ghee melted
  • ¼ cup maple syrup
  • 2 tsp vanilla extract
  • ½ tsp baking soda

Instructions

  1. First, add all ingredients to a large mixing bowl or KitchenAid and mix until dough is formed.
  2. Next, form dough into a ball and wrap in plastic wrap.  Refrigerate for at least 20 minutes.
  3. Remove dough from fridge and preheat oven to 350 degrees Fahrenheit.  Then, line a baking sheet with parchment paper.
  4. Place dough between two sheets of parchment paper and use a rolling pin to roll dough out to 1/2 inch thickness.
  5. Remove top sheet of parchment paper.  Using cookie cut outs, cut out dough.  Place cookies on baking sheet.
  6. Continue this process until the dough is used up.
  7. Next, bake for 6 to 8 minutes, depending on size and shape of cookies.
  8. Remove pan from oven and allow cookies to cool on baking sheet for 3 minutes before carefully transferring them to a cooling rack.
  9. Finally, once cooled completely, dust with confectioner's sugar if desired.

Notes

  • Mix cookie dough until completely mixed.  Be sure there are no clumps of butter left.
  • Refrigerate for at least 20 minutes.  The longer the dough refrigerates, the easier it is to cut out.
  • Since this recipe is made with almond flour, these cookies are slightly softer than traditional cut out sugar cookies.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
