Gingerbread Waffles
Description
This recipe makes gingerbread-flavored waffles by mixing milk, dairy-free butter, eggs, and molasses as the wet ingredients, then combining them with all-purpose flour, gluten-free baking powder, cinnamon, ginger, and nutmeg. The batter is intentionally left with some lumps to contribute to waffle texture. It’s cooked in a waffle iron according to the manufacturer’s instructions until golden brown.
The result is waffles with a warm, spicy aroma and taste typical of gingerbread desserts, complemented by the rich sweetness of molasses. The waffles have a crisp outer layer with airy pockets inside, a texture enhanced by the lumps in the batter. Serving them topped with fruit adds freshness and balance to the spices.
To achieve the best results, it is recommended to preheat the waffle maker well, not to open it early during cooking, and to pour measured amounts of batter to prevent overflow. Leftover waffles can be stored in an airtight container for up to two days in the refrigerator. The recipe aligns with 9 WW Blue Plan SmartPoints per serving.
Ingredients
- 1 ¾ cups milk 425ml
- ¼ pound dairy free butter plus 1 Tablespoon, 125g, melted
- 3 egg beaten
- 2 ½ Tablespoons molasses
- 2 cups all-purpose flour 325g
- 1 teaspoon baking powder gluten free
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon nutmeg
Instructions
- Whisk together milk, butter and eggs and molasses and set aside.
- Mix together the flour and spices in a large bowl and make a hole in the center.
- Slowly whisk the milk mixture into the flour to make a batter, and don't worry if there are some lumps.
- Cook the waffles according to your waffles maker instructions until all the waffle batter is finished and set aside somewhere warm.
- Serve the waffles topped with fruit.
Notes
- Don't worry about lumps when mixing batter; they create little air pockets for fluffier waffles.
- Preheat the waffle maker thoroughly before cooking to ensure even browning.
- Use a ladle or measuring cup to pour batter onto the center of the waffle iron to avoid overflow.
- Resist opening the waffle iron too soon; wait until the cooking indicator to get crisp golden waffles.
- Store leftover waffles in an airtight container in the refrigerator for up to 2 days.
