These Gingerbread Waffles are perfect for a winter treat and can even be served on Christmas morning! The gingerbread flavors and scents bring back warm memories from Christmas past.

Ingredients
- 1 ¾ cups (425ml) milk
- ¼ pound (125g) dairy free butter, melted plus 1 Tablespoon
- 3 eggs beaten
- 2 ½ Tablespoons molasses
- 2 cups (325g) all purpose flour
- 1 teaspoon baking powder gluten free
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon nutmeg

Instructions
- Whisk together milk, butter and eggs and molasses and set aside.
- Mix together the flour and spices in a large bowl and make a hole in the center.
- Slowly whisk the milk mixture into the flour to make a batter, and don't worry if there are some lumps.
- Cook the waffles according to your waffles maker instructions until all the waffle batter is finished and set aside somewhere warm.
- Serve the waffles topped with fruit.
