Glass Noodles Salad
Description
This salad starts by softening glass noodles in warm water and then blanching briefly to ensure tender yet firm strands. After rinsing in cold water, the noodles are mixed with julienned cucumber and shredded red chili peppers for crunch and heat. Minced garlic adds pungency while chopped scallion and coriander introduce freshness and herbal notes.
The dressing, a combination of light soy sauce, vinegar, salt, sesame oil, chili oil, and a touch of white sugar, provides a harmony of salty, tangy, spicy, and slightly sweet elements that cling to the noodles and vegetables. This creates a vibrant, flavorful salad with a balance of soft textures from noodles and crispness from vegetables.

Ingredients
- 200 g mung bean glass noodles
- 2 cloves garlic minced
- 2 scallion chopped into small pieces
- 30 g cucumber shredded
- 10 g red chili peppers shredded
- 2 Coriander minced
Seasonings
- 3 tbsp. soy sauce light
- 1 tsp. vinegar
- 1/4 tsp. salt
- 1 tbsp. sesame oil
- 1 tbsp. Chili oil
- 1/2 tbsp. white sugar

Steps
Prepare the glass noodles
- l Firstly put 200g glass noodles into a bowl, add hot water into the bowl until all the noodles are soaked in the water. The temperature of hot water can be about 50℃, and after the noodles are softened, drain them out of the water.
- Add water into a pot, boil the water and put the noodles into the pot and blanch for about 15-20seconds. Then transfer the noodles out and rinse them under cold water for later cooking.
Prepare the sauce
- Transfer the glass noodles into a bowl, put the shredded cucumber into the bowl, add chili peppers and garlic, add light soy sauce, vinegar, salt, sesame oil, chili oil and white sugar, sprinkle the scallion and coriander, and then mix all the ingredients and seasonings evenly, you will get a delicious salad!
