Glazed Carrots

Glazed Carrots are baked carrot slices tossed with olive oil, agave syrup, cinnamon, salt, and pepper, then roasted until tender and lightly caramelized. The roasting intensifies the natural sweetness of the carrots, while the glaze adds a mild maple-like flavor and warm spice from cinnamon. A sprinkle of fresh parsley finishes the dish for a fresh, herbal contrast.

Description

Carrots are washed, peeled, and diagonally sliced to pieces roughly 1 to 1.5 inches, aiming for uniform size to ensure even cooking. The olive oil and agave syrup glaze melds with cinnamon, salt, and pepper to coat each piece thoroughly. The mixture is placed in a zipper bag to shake and evenly distribute the glaze before baking at 400°F.

Roasting for 25 to 35 minutes softens the carrots until they are tender and easily pierced by a fork. The high heat encourages caramelization on the surface, enhancing flavor without losing the vibrant carrot taste. Fresh parsley adds a light herbal note that contrasts with the sweetness and warmth of the glaze.

This side pairs well with a range of main dishes, offering a balance of sweet, spicy, and savory flavors with a tender texture and subtle crispness on the edges from roasting.

  • 1 pound carrot washed and peeled, fresh
  • 2 tbsp olive oil
  • 2 tbsp agave syrup maple syrup can also be used
  • 1/4 tsp cinnamon
  • salt to taste
  • black pepper to taste
  • 1/4 cup parsley fresh, chopped

Instructions

  1. 1. Preheat oven to 400 degrees F. 
  2. 2. Slice carrots diagonally into approximately 1 - 1.5" size pieces. Try to keep pieces similar in baking size, meaning the small end of the carrot would have larger cut pieces while you'd want to cut the larger end of the carrot thinner. 
  3. Combine olive oil, agave syrup, cinnamon, salt and pepper and stir well to combine. Transfer to a large zipper top bag. Add carrots, close and shake well to coat thoroughly.  
  4. Bake for approximately 25-35 minutes, or until desired tenderness has been reached. Start checking carrots with a fork at 25 minutes, testing to see how easily the fork pierces the carrots. When carrots are soft and easily pierced, they are done. 
  5. Remove from oven, transfer to a serving dish, and sprinkle with fresh chopped parsley. Serve immediately.
