Glazed Carrots

Glazed Carrots are sliced carrots cooked until just tender, then coated in a buttery brown sugar sauce seasoned with sea salt and black pepper. This combination provides a sweet yet subtly savory flavor and a smooth, glossy finish. The gentle simmering creates tender slices with a soft texture that works well as a side dish for a variety of meals.

Description

This Glazed Carrots recipe starts by simmering peeled carrot slices in water until they are nearly tender but still hold their shape. After draining, the carrots are returned to the pan where butter and light brown sugar are combined over low heat to create a sauce that coats each piece. The seasoning with sea salt and ground black pepper balances the sweetness, giving the dish a rounded flavor profile.

The resulting dish has a soft texture with a slight bite, and the warm glaze adds shine and a subtle richness. Cooking in stages allows the carrots to absorb some sweetness without becoming mushy.

This side dish pairs well with roasted or grilled meats and can be served immediately. The notes suggest substituting baby carrots, with a reminder they may take longer to cook through.

For reheating, microwaving in short intervals or warming on the stovetop with added butter preserves texture and moisture. These practical tips help maintain quality if leftovers are available.

Ingredients

Servings
  • 2 pounds carrot washed, peeled and cut into ½’’ thick slices
  • 1 ½ cups water
  • 3 Tablespoons butter
  • ¼ cup light brown sugar packed
  • ¼ teaspoon salt sea salt
  • teaspoon black pepper ground

Instructions

  1. Combine carrots and water in saucepan over medium heat. Bring to a boil, cover and simmer for 8-10 minutes or until carrots are just becoming tender when pierced with a fork.
  2. Drain water off carrots.
  3. Add butter and brown sugar to saucepan, stir to combine and cook on low until butter is melted and makes a sauce, about 4-5 minutes.
  4. Season with salt and pepper and serve immediately.

Notes

  • Baby carrots can be used instead of sliced carrots but may require additional cooking time.
  • To reheat, microwave in one-minute intervals, stirring in between to avoid overcooking and mushiness.
  • Alternatively, reheat on the stove with 1/2 to 1 tablespoon of butter, stirring to coat and prevent sticking.
