Description
This glazed carrot recipe starts by combining baby carrots with water, butter, and firmly packed light brown sugar in a pan over medium-high heat. After bringing to a boil, the pan is covered and the carrots simmer gently until tender after about six minutes. Then, cooking continues uncovered on high heat while stirring occasionally until all the water evaporates and the carrots develop a glossy, sweet coating.
The carrots become tender yet maintain their shape with a shiny glaze that balances sweetness and buttery flavor. Salt and black pepper are added at the end to enhance the natural carrot taste. This method intensifies the carrots' natural sugars through caramelization combined with butter for richness.
For variation, toasted nuts like pine nuts, walnuts, or pecans can be added after the initial simmer to bring texture and nutty notes. The dish can also be baked in the oven with similar ingredients for a different texture and caramelization.
Ingredients
- 1 (16-ounce) bag carrot baby
- ½ cup water
- 2 tablespoons butter unsalted
- 2 tablespoons light brown sugar packed

Instructions
- Combine carrots, water, butter, and brown sugar in a pan over medium-high heat and bring to a boil.
- Cover and reduce the heat to cook on low for approximately 6 minutes.
- Keeping covered, turn the heat back to high and cook, stirring occasionally, until all the water is evaporated and carrots are tender, another 5–6 minutes.
- Remove from the heat and sprinkle with salt and pepper.
Notes
- Add ⅓ cup toasted pine nuts or chopped toasted walnuts or pecans after the initial simmer for additional texture and flavor.
- Oven method: Place carrots in a buttered casserole dish, sprinkle with salt, pepper, brown sugar, and drizzle with melted butter. Cover and bake at 350°F for 1 hour.
