Glazed Lemon Cookies
Description
These Glazed Lemon Cookies are made by blending all-purpose flour, baking powder, salt, sugar, and fresh lemon zest, then creaming with butter and egg to create a smooth, lemon-flavored dough. The dough is portioned and gently flattened before baking until set and lightly golden around the edges. Once cooled slightly on the baking sheet and then on racks, the cookies are dipped in a simple glaze of powdered sugar and fresh lemon juice, which dries to a sweet, tangy coating.
The texture balances a soft crumb with a crisp edge, enhanced by the bright citrus flavor from the zest and glaze. These cookies are suited for serving at tea, alongside coffee, or as a light dessert option.
They store well in an airtight container at room temperature for several days or freeze well for longer storage, retaining their texture and flavor upon thawing.

- 1 egg large
- 1 teaspoon vanilla extract
