Glazed Salmon with Peaches

Glazed Salmon with Peaches pairs tender salmon fillets with a sweet and tangy glaze made from brown sugar, butter, soy sauce, and mustard, complemented by canned peaches coated in the same glaze. Baking then broiling the salmon yields a balance of cooked-through fish with caramelized glaze and slightly browned fruit, resulting in a flavorful, moist dish served best over rice.

Description

This recipe combines a 1.5-pound salmon fillet with a glaze blending brown sugar, butter, soy sauce, whole grain mustard, olive oil, fresh grated ginger, and seasonings. The glaze's sweetness and acidity balance the salmon’s richness. Canned peach chunks, drained but coated in the glaze, are spread over the salmon before baking. This allows the fruit to absorb the flavors and caramelize lightly alongside the fish.

The cooking involves baking the salmon at 400°F for 12-15 minutes, then switching to high broil for a few minutes to set the glaze and brown the peaches, giving a pleasing texture contrast and glossy finish. The salmon remains moist while the glaze develops a sticky, flavorful coating.

Serving the salmon hot over a bed of rice highlights the combination of sweet, savory, and tangy notes, making it a distinct main course. The peaches add bursts of softened fruitiness that complement the umami glaze, enhancing the overall flavor profile and providing visual appeal with their slight browning.

  • 2 tbsp whole grain mustard
  • 1 tbsp olive oil
  • 1 1/2 tsp ginger freshly grated
  • 1/4 tsp kosher salt

Instructions
