Description
This recipe involves glazing a 7 to 10-pound spiral sliced ham with a blend of apple juice, brown sugar, and pure maple syrup cooked down until thick and shiny. The glaze is applied halfway through baking at 350°F, with the ham covered by foil to retain moisture and heat evenly until it reaches 140°F internally.
After the initial baking, the remaining glaze is poured over the ham, and it is returned to a hotter oven (450°F) uncovered to caramelize the glaze carefully without burning. This produces a glossy, flavorful coating that enhances the ham’s inherent sweetness and saltiness.
The ham is fully cooked through spiral slicing, making it easy to serve. The sweet and tangy glaze complements the savory meat, making it ideal for holiday dinners or gatherings.
The glaze cooking time may vary depending on the syrup and juice quality, so monitor the consistency to ensure proper thickness before using.
Ingredients
- 7-10 pound ham spiral sliced
- 1 cup apple juice
- 1 cup brown sugar light or dark will work
- 1 cup pure maple syrup
Instructions
- Preheat oven to 350 degrees F.
- In a medium saucepan over medium heat combine the apple juice, brown sugar, and maple syrup. Bring to a low boil then reduce heat to medium low and simmer for approximately 10-15 minutes, stirring occasionally. If needed continue cooking a few extra minutes. Glaze is ready when it's thickened and shiny.
- Place ham in a baking greased baking dish and coat with half of the glaze mixture. Cover pan with foil, tenting so foil does not touch the ham, and bake for approximately 1 1/2 to 2 hours, or until a thermometer inserted at the thickest part of the ham reads 140 degrees F.
- Pour remaining glaze over the top of ham, and return to oven, uncovered. Turn temperature to 450 degrees and bake for another 5-7 minutes, keeping a close eye on it to prevent burning. When glaze is turning dark and caramelizing (but not burning!) remove from oven. Serve and enjoy.
Notes
- Glaze cooking time can vary with maple syrup and apple juice quality; adjust simmering time to achieve thick, shiny consistency.
