Gluten-Free Blueberry Banana Bread

Gluten-Free Blueberry Banana Bread melds ripe mashed bananas with fresh blueberries and optional chocolate chips for a moist, tender loaf. The use of gluten-free all-purpose flour and warm spices like cinnamon complements the natural sweetness. Baking in a parchment-lined loaf pan allows for even cooking and a golden crust, while the added maple syrup or brown sugar enhances flavor.

Description

This Gluten-Free Blueberry Banana Bread combines mashed ripe bananas and fresh blueberries with gluten-free all-purpose flour to create a soft, moist quick bread. Eggs and avocado oil (or melted butter) provide structure and richness, balanced by a touch of pure maple syrup or brown sugar for sweetness. A blend of baking soda and baking powder ensures rise, while ground cinnamon adds warmth to the flavor profile.

The blueberries are tossed with flour before adding to the batter to prevent them from sinking, promoting even distribution throughout the loaf. Baking at 350°F in a parchment-lined 9x5" loaf pan results in a tender crumb and golden crust. The bread is allowed to cool completely before slicing to maintain texture.

This loaf makes for a great breakfast treat, snack, or a simple dessert. It can be enjoyed plain or warmed with butter and honey for extra indulgence.

Ingredients

Servings
  • 4 banana mashed (about 1.5 cups, ripe
  • 2 egg large
  • ¼ cup avocado oil or melted butter
  • 2 Tbsp pure maple syrup or brown sugar
  • 1 ⅔ cups all-purpose flour gluten-free
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt sea salt
  • 2 tsp ground cinnamon
  • 1 cup blueberries fresh, plus more for sprinkling on top
  • cup chocolate chips optional

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a 9" x 5" loaf pan with parchment paper.
  2. Mash the bananas in a mixing bowl with a fork until creamy. Mix in the eggs, avocado oil, and pure maple syrup until creamy.
  3. Add the dry ingredients (flour, baking soda, baking powder, sea salt and cinnamon) and stir well until the dough is nice and combined.
  4. Toss the blueberries in 1 teaspoon of gluten-free flour in a bowl before adding them to batter. Carefully stir in the blueberries until distributed into the batter.
  5. Transfer the banana bread batter to the parchment-lined loaf pan. Bake for 50 to 60 minutes, until the bread tests clean. I bake mine for 50 minutes, turn off the oven and allow the bread to sit in the hot oven for another 10 to 15 minutes.
  6. Allow the bread to cool completely before slicing and serving. I like heating up a slice with a pat of butter and a drizzle of honey ;)
