Super easy gluten free chocolate cookie ice cream sandwich - half the calories of the usual store-bought version and SO decadent!

Ingredients
- 8 gluten free chocolate cookies
- 2 pints Swell Ice Cream
Instructions
- Place one cookie on a plate as the base of your ice cream sandwich. (If using our recipe for chocolate avocado cookies, use 2TB batter for each cookie instead of 1TB).
- Cut pint of Swell Ice Cream into 3 "slices," cutting right through the carton.
- Layer one Swell Ice Cream slice on this cookie and remove the carton wrapped around the ice cream.
- Top with a second gluten free chocolate cookie and enjoy!
