Gluten Free Drop Biscuits combine gluten free baking flour with baking powder, salt, egg, milk, and softened butter to create tender biscuits dropped by spoonful onto a baking sheet. Baking at high heat produces a lightly browned exterior with a soft crumb inside, suitable for gluten free diets.

Description

The biscuits use gluten free flour blends, such as Bob Mills or Cup4Cup, combined with baking powder and salt to provide leavening and flavor. Butter is beaten first to incorporate air and achieve richness. Then egg and milk are added to form a cohesive dough which is portioned by spoon or hands onto a parchment-lined sheet to bake at 450°F.

Baking for 10 to 14 minutes yields biscuits that are cooked through without being wet inside or overly browned. Cooling slightly before optionally brushing with melted butter adds a finishing sheen and flavor. These drop biscuits provide a straightforward, gluten free alternative to traditional biscuits with a tender texture.

Ingredients

  • 1 1/2 cups gluten free baking flour (I have used Bob Mills gluten free flour and also Cup4Cup gluten free flour and both work great.)
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1 butter softened (1/2 cup, stick

Instructions

  1. Preheat oven to 450 degrees
  2. In a mixer, beat the butter.
  3. Add in the flour, salt, and baking powder. Mix well.
  4. Add the egg and milk and blend together.
  5. Using a spoon and your hands to form  biscuits onto a parchment lined baking sheets.  (I use a silicone baking mat like these)
  6. Bake in preheated oven for 10 to 14 minutes. You do not want them to be overcooked. You do not want them to be wet on the inside. Mine normally take 12 minutes.
  7. Allow to cool. Brush with melted butter if you want.

Notes

  • Both Bob Mills and Cup4Cup gluten free flours can be used successfully.
  • Bake at 450°F for about 12 minutes until lightly golden and cooked through.
  • Brush with melted butter after baking for added flavor and shine.
